Mackerel fillets (as caught, filleted, brined and smoked by the man with the tan).



Add a large tablespoon (about 50g) of cream cheese, a teaspoon of horseradish, a pinch of cayenne, juice of half a lemon and a tablespoon of olive oil; blend vigorously, serve with toast and gherkins. And a mint, for afters.

My mouth is watering, and it's bedtime! :) I'm sure it tasted as delicious as it looked. I have a yearning for freshly-caught fish...
