paus-nip

There seems to be quite an interest in Parsnip Cake. If i were to make another, i would use this recipe, and replace the oatmeal with the same amount of grated parsnip.

You obviously don't need to let the parsnip and buttermilk stand for 20 minutes. Instead, beat together all the wet ingredients (sugar, melted butter, eggs, buttermilk (probably half the amount stated) and parsnip - and grated ginger if you are using fresh, rather than dried) and add to dry ingredients.

Meanwhile, i am making Curried Parsnip Soup for lunch, from this beautiful book.

I was given parsnip chips at school once. It was a test dish. It failed.

I'm thinking that we should hold a bloggers/bitches event somewhere not too far from Carnalis and put her in charge of catering... :-)

I must admit that I detested parsnips as a kid. My mother would put them in stews and soups, and I really didn't like them.

That being said, I have not tried them as an adult. Perhaps I should... I have learned to eat eggs (which I also hated as a child) in certain formats but still cannot abide a hard cooked yolk.

You seem to have many recipes for parsnips prepared in all kinds of interesting ways...

And speaking of chips, here in Canada (or at least, the part I live in), sweet potato fries are becoming increasingly popular.

They are very tasty, if I do say so myself. :-)

artist exposed - did they guess the secret ingredient?

ponita - roast parsnips are heavenly, especially with a little maple syrup. We have vegetable crisps here - beetroot, sweet potato, parsnip - yum. Better than potato, any day.

No - they got the cinnamon and ginger... The half almonds worked well instead of raisin (which I would have preferred).
